François Gilbert

Co-founder of the Gilbert & Gaillard group in 1989, he now leads a multimedia company devoted to wine, present in 22 countries and recognized for the Gilbert & Gaillard International Challenge. François Gilbert, co-founder of Gilbert & Gaillard, will tell you everything there is to know about their origins, character and aromatic complexity. A category of Champagne in its own right, it is made from 100% white grapes, in this case Chardonnay in the vast majority of examples. Its prestige stems from the Côte des Blancs and its Grand Cru-classified vineyards where the varietal reigns supreme.
Blanc de Blancs Champagne only contains white grape varieties like Chardonnay, though also less frequently, Arbane, Petit Meslier, Pinot Blanc and Pinot Gris. It is a delicate wine with welcome exuberance, and it can take on numerous personas. In younger examples with some verve, it gives the tastebuds a wake-up call as an aperitif. In more mature blends, it is dense and saline and works well with buffets, whilst the consummate versions mirror the chalky soils of their terroir with their aromas of gunflint and chalk, not to mention that inevitable touch of toast and pastries.
